Do we have to define our events up front?

No. Record an event once and it appears in that account's segment builder and flow-trigger pickers from then on. You can segment on "did this at least N times", "exactly N" or "never", over any timeframe.

Can a flow react to things our app doesn't send?

Yes, and that is the point. Orders, abandoned checkouts, form submissions, deals and support tickets are already on the record, so a flow can hold a nudge while a ticket is open or skip someone in a live deal.

Is there an API for the rest?

Yes. A documented public API covers leads, bookings, chat, subscribers, tracking and embeds, with signed webhooks in and HTTP calls out from any flow.

How are emails charged?

They aren't, one by one. You pay for marketing contacts, the first 2,500 free, and sending is unlimited within fair use.
